Ingredients

For the brownie base:
• ½ cup (1 stick) unsalted butter, melted
• ¾ cup granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• 2 tbsp unsweetened cocoa powder
• 1 tbsp red food-safe gel (or 3 tsp liquid coloring)
• ½ cup all-purpose flour
• ¼ tsp salt
• ½ tsp baking soda
• ½ cup buttermilk (or ½ cup milk + ½ tbsp vinegar)

For the cream cheese swirl:
• 8 oz cream cheese, softened (or dairy-free alternative)
• ¼ cup sugar
• 1 egg
• ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch pan or line with parchment paper.
  2. Make the brownie base: In a bowl, whisk melted butter and sugar. Beat in eggs one at a time, then stir in vanilla. Mix in cocoa, food coloring, flour, salt, and baking soda. Gradually add buttermilk, mixing until just combined.
  3. Make the swirl: In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  4. Pour brownie batter into the pan and spread evenly. Drop spoonfuls of cream cheese mixture on top.
  5. Use a knife to gently swirl through the batter—don’t overmix!
  6. Bake 28–32 minutes, until edges are set and center is fudgy (a toothpick should have moist crumbs).
  7. Cool completely before slicing for clean cuts.

Store in the fridge for extra-dense texture!
