Ingredients
• 2 lbs (900g) sweet potatoes, peeled and cubed (1-inch pieces)
• 2 tbsp olive oil or melted coconut oil
• 3 tbsp pure maple syrup
• 1 tsp ground cinnamon
• ¼ tsp nutmeg
• ½ tsp salt
• Optional: pinch of cayenne for heat
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a large bowl, toss sweet potato cubes with olive oil, maple syrup, cinnamon, nutmeg, salt, and cayenne (if using) until evenly coated.
- Spread in a single layer on the baking sheet—don’t overcrowd (use two sheets if needed).
- Roast 25–30 minutes, flipping halfway, until tender and caramelized at the edges.
- Serve warm as a side dish or over greens for a hearty salad!
