Ingredients
• 2 ripe bananas, mashed (about 1 cup)
• ¼ cup maple syrup or honey (optional, for extra sweetness)
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups old-fashioned oats (gluten-free if needed)
• ½ cup all-purpose flour (or oat flour for GF)
• ½ tsp baking soda
• ½ tsp cinnamon
• ¼ tsp salt
• ½ cup mix-ins: raisins, chocolate chips, walnuts, or dried cranberries
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mash bananas. Stir in maple syrup (if using), egg, and vanilla until smooth.
- Add oats, flour, baking soda, cinnamon, and salt. Mix until just combined. Fold in your favorite mix-ins.
- Scoop tablespoon-sized balls of dough and place on the tray (they spread slightly).
- Bake 12–15 minutes, until golden brown around the edges.
- Let cool on the tray 5 minutes—they’ll firm up as they cool. Then transfer to a wire rack.
