Ingredients

• 2 ripe bananas, mashed (about 1 cup)
• ¼ cup maple syrup or honey (optional, for extra sweetness)
• 1 egg
• 1 tsp vanilla extract
• 1 ½ cups old-fashioned oats (gluten-free if needed)
• ½ cup all-purpose flour (or oat flour for GF)
• ½ tsp baking soda
• ½ tsp cinnamon
• ¼ tsp salt
• ½ cup mix-ins: raisins, chocolate chips, walnuts, or dried cranberries


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mash bananas. Stir in maple syrup (if using), egg, and vanilla until smooth.
  3. Add oats, flour, baking soda, cinnamon, and salt. Mix until just combined. Fold in your favorite mix-ins.
  4. Scoop tablespoon-sized balls of dough and place on the tray (they spread slightly).
  5. Bake 12–15 minutes, until golden brown around the edges.
  6. Let cool on the tray 5 minutes—they’ll firm up as they cool. Then transfer to a wire rack.
