Ingredients

• ½ cup (1 stick) unsalted butter, softened (or vegan butter)
• ¾ cup brown sugar
• 2 ripe bananas, mashed (about 1 cup)
• 1 tsp vanilla extract
• 1 ¾ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking soda


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter and brown sugar until light and fluffy (2–3 minutes).
  3. Mix in mashed bananas and vanilla until smooth.
  4. In another bowl, whisk flour and baking soda. Gradually add to wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized balls of dough and place on trays (they spread slightly).
  6. Bake 10–12 minutes, until golden around the edges and soft in the center.
  7. Let cool on the tray 5 minutes—they’ll firm up as they cool. Then transfer to a wire rack.
