Ingredients
• ½ cup (1 stick) unsalted butter, softened (or vegan butter)
• ¾ cup brown sugar
• 2 ripe bananas, mashed (about 1 cup)
• 1 tsp vanilla extract
• 1 ¾ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking soda
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat butter and brown sugar until light and fluffy (2–3 minutes).
- Mix in mashed bananas and vanilla until smooth.
- In another bowl, whisk flour and baking soda. Gradually add to wet ingredients, mixing until just combined.
- Scoop tablespoon-sized balls of dough and place on trays (they spread slightly).
- Bake 10–12 minutes, until golden around the edges and soft in the center.
- Let cool on the tray 5 minutes—they’ll firm up as they cool. Then transfer to a wire rack.
