Ingredients
• 8–10 egg roll wrappers (or spring roll skins)
• ½ cup canned cherry pie filling (or homemade: ¾ cup cherries + 2 tbsp sugar + 1 tsp cornstarch, cooked & cooled)
• 4 oz cream cheese, softened (or dairy-free alternative)
• 2 tbsp powdered sugar
• ½ tsp vanilla extract
• Oil for frying (vegetable, canola, or peanut oil)
• Optional toppings:
• Powdered sugar (for dusting)
• Warm cherry sauce or caramel drizzle
• Vanilla ice cream (for serving)
Instructions
- In a small bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- Lay an egg roll wrapper on a clean surface like a diamond. Place 1 tbsp cream cheese mixture in the center, then top with 1 tsp cherry pie filling.
- Fold the bottom corner over the filling, then fold in the left and right corners. Roll up tightly, sealing the top edge with a dab of water.
- Repeat with remaining wrappers and filling.
- Heat oil to 350°F (175°C) in a deep pot or fryer. Fry 2–3 egg rolls at a time, 1–2 minutes per side, until golden brown and crispy. Drain on paper towels.
- Dust with powdered sugar and serve warm with extra cherry sauce or a scoop of ice cream!
