Ingredients
For the doughnuts:
• 2 ¼ tsp (1 packet) active dry yeast
• ½ cup warm milk (105–110°F / 40–43°C)
• ¼ cup granulated sugar
• 1 egg
• ¼ cup (½ stick) unsalted butter, melted
• ½ tsp salt
• 2 cups all-purpose flour (plus more for dusting)
For frying:
• Vegetable, canola, or peanut oil (for deep frying)
For the glaze:
• 1 cup powdered sugar
• 2–3 tbsp warm milk or cream
• ½ tsp vanilla extract
• Pinch of salt
Instructions
- Activate yeast: In a bowl, mix warm milk, 1 tbsp sugar, and yeast. Let sit 5–10 minutes until foamy.
- In a large bowl or stand mixer, add yeast mixture, remaining sugar, egg, melted butter, and salt. Mix well.
- Gradually add flour, mixing until a soft dough forms. Knead 3–5 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rise 1 hour or until doubled.
- Roll out on a floured surface to ½-inch thickness. Cut into rounds using a doughnut cutter or two round cutters (one large, one small).
- Place on a parchment-lined tray, cover, and let rise 30 minutes.
- Heat oil to 350°F (175°C) in a deep pot or fryer.
- Fry doughnuts 1–2 at a time, 30–45 seconds per side, until golden. Drain on paper towels.
- While still warm, dip tops into glaze (made by whisking powdered sugar, milk, vanilla, and salt). Let set 5 minutes.
