Ingredients

• 6 cups crisp rice cereal (like Rice Krispies)
• 1 tbsp butter or coconut oil
• 4 oz (½ cup) semi-sweet chocolate chips (or dairy-free)
• 10 oz marshmallows (about 4 cups mini or 30 regular)
• 1 tsp vanilla extract
• Optional: ½ cup chopped nuts, sprinkles, or crushed cookies for coating


Instructions

  1. Line a tray with parchment paper or lightly grease your hands.
  2. In a large pot over low heat, melt butter and chocolate chips, stirring until smooth.
  3. Add marshmallows and stir until completely melted and gooey.
  4. Remove from heat. Stir in vanilla.
  5. Fold in crisp rice cereal until fully coated.
  6. Let cool slightly (2–3 minutes) so it’s easier to handle.
  7. Scoop tablespoon-sized portions and roll into balls using slightly greased hands.
  8. Optional: Roll in chopped nuts, sprinkles, or cocoa powder for extra flair.
  9. Place on the tray and let set 15–20 minutes.
