Ingredients
• 6 cups crisp rice cereal (like Rice Krispies)
• 1 tbsp butter or coconut oil
• 4 oz (½ cup) semi-sweet chocolate chips (or dairy-free)
• 10 oz marshmallows (about 4 cups mini or 30 regular)
• 1 tsp vanilla extract
• Optional: ½ cup chopped nuts, sprinkles, or crushed cookies for coating
Instructions
- Line a tray with parchment paper or lightly grease your hands.
- In a large pot over low heat, melt butter and chocolate chips, stirring until smooth.
- Add marshmallows and stir until completely melted and gooey.
- Remove from heat. Stir in vanilla.
- Fold in crisp rice cereal until fully coated.
- Let cool slightly (2–3 minutes) so it’s easier to handle.
- Scoop tablespoon-sized portions and roll into balls using slightly greased hands.
- Optional: Roll in chopped nuts, sprinkles, or cocoa powder for extra flair.
- Place on the tray and let set 15–20 minutes.
