Ingredients
• 1 sheet refrigerated pie crust or puff pastry (thawed)
• ¾ cup pumpkin puree (unsweetened)
• 2 tbsp brown sugar or maple syrup
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ¼ tsp ginger
• Pinch of salt
• 1 egg (for egg wash)
• Black food-safe gel or icing (for carving faces)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, and salt until smooth.
- Roll out pie crust and cut into 4-inch circles (use a bowl or cutter).
- Place 1–2 tsp filling in the center of half the circles.
- Brush edges with water. Top with remaining circles. Seal with a fork.
- Use a small knife to carve jack-o’-lantern faces: triangle eyes, nose, and jagged smile.
- Beat egg and brush over tops for golden shine.
- Bake 18–22 minutes, until golden and puffed.
- Cool slightly. Use black icing to enhance the carved features for extra spookiness!
