• 8 thick slices brioche, challah, or sourdough bread (day-old works best)
• 3 eggs
• 1 cup milk (dairy or plant-based)
• ½ cup canned pumpkin puree (unsweetened)
• ¼ cup maple syrup or honey
• 1 tsp vanilla extract
• 1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp each nutmeg, ginger, cloves)
• ½ tsp ground cinnamon
• Pinch of salt
• 2 tbsp butter or coconut oil (for cooking)
For serving:
• Maple syrup or extra honey

Instructions
- In a shallow dish, whisk eggs, milk, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.
- Dip each bread slice into the mixture, letting it soak 20–30 seconds per side (don’t oversoak or it may fall apart).
- Heat a skillet or griddle over medium heat. Melt butter.
- Cook soaked bread 3–4 minutes per side, until golden brown and cooked through.
- Serve warm, drizzled with maple syrup and topped with your favorites: whipped cream, nuts, or fruit!
