Ingredients

• 8 thick slices brioche, challah, or sourdough bread (day-old works best)
• 3 eggs
• 1 cup milk (dairy or plant-based)
• ½ cup canned pumpkin puree (unsweetened)
• ¼ cup maple syrup or honey
• 1 tsp vanilla extract
• 1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp each nutmeg, ginger, cloves)
• ½ tsp ground cinnamon
• Pinch of salt
• 2 tbsp butter or coconut oil (for cooking)

For serving:
• Maple syrup or extra honey
• Whipped cream or yogurt
• Toasted pecans or walnuts
• Fresh berries or banana slices


Instructions

  1. In a shallow dish, whisk eggs, milk, pumpkin puree, maple syrup, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.
  2. Dip each bread slice into the mixture, letting it soak 20–30 seconds per side (don’t oversoak or it may fall apart).
  3. Heat a skillet or griddle over medium heat. Melt butter.
  4. Cook soaked bread 3–4 minutes per side, until golden brown and cooked through.
  5. Serve warm, drizzled with maple syrup and topped with your favorites: whipped cream, nuts, or fruit!
