Ingredients
For the crust:
• 1 unbaked 9-inch pie crust (homemade or store-bought)
For the filling:
• ¾ cup molasses (not blackstrap)
• ½ cup granulated sugar
• 2 large eggs
• ¼ cup melted butter or coconut oil
• 1 tsp vanilla extract
• ½ tsp ground ginger
• ½ tsp cinnamon
• ¼ tsp salt
• 1 cup sweetened shredded coconut
Instructions
- Preheat oven to 350°F (175°C). Place pie crust in a 9-inch pie dish.
- In a bowl, whisk molasses and sugar until smooth.
- Beat in eggs one at a time. Stir in melted butter, vanilla, ginger, cinnamon, and salt.
- Fold in shredded coconut.
- Pour mixture into the unbaked pie crust.
- Bake 45–55 minutes, until set and center jiggles slightly (a knife should come out mostly clean).
- Let cool completely on a wire rack—this allows the filling to fully set. Chill 1–2 hours before slicing for best texture.
