🥩 Delicious Brown Sugar Chops

Ingredients

• 4 bone-in or boneless pork chops (about 1 inch thick)
• Salt & black pepper to taste
• 1 tbsp olive oil or butter (for cooking)

For the brown sugar glaze:
• ½ cup brown sugar (packed)
• ¼ cup ketchup
• 2 tbsp soy sauce (or tamari for gluten-free)
• 1 tbsp apple cider vinegar or lemon juice
• 1 clove garlic, minced
• ½ tsp smoked paprika
• ¼ tsp mustard powder (optional)


Instructions

  1. Season pork chops generously with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, warm olive oil. Sear chops 3–4 minutes per side until golden brown. Remove and set aside.
  3. In the same pan, add all glaze ingredients. Whisk together and simmer 2–3 minutes until slightly thickened.
  4. Return pork chops to the skillet, spooning sauce over them.
  5. Reduce heat to low. Cover and simmer 6–8 minutes (or bake at 375°F for 15 mins) until chops reach an internal temperature of 145°F (63°C).
  6. Flip halfway and baste often with the glaze for a sticky, caramelized finish.
  7. Let rest 5 minutes before serving. Spoon extra sauce on top!

• Mashed potatoes or rice to soak up the sauce
• Roasted vegetables or green beans
• A crisp apple salad

💡 Make it ahead: Glaze can be made in advance and stored in the fridge for up to 1 week. Reheat before using.
