  • 1 sheet puff pastry, thawed
  • 2 ripe pears, peeled and diced
  • 2 tablespoons butter
  • 2 tablespoons brown sugar or honey
  • 1 teaspoon lemon juice
  • 1–2 teaspoons fresh thyme (or ½ teaspoon dried)
  • 4 oz blue cheese, crumbled
  • ¼ cup chopped walnuts or pecans (optional but delicious)
  • 1 egg (for egg wash)

1. Prep the Puff Pastry

  • Preheat oven to 400°F (200°C).
  • Cut the puff pastry into small squares (about 2 inches).
  • Press the squares into a mini muffin tin to form little cups.

2. Cook the Pear Filling

  • In a skillet, melt butter over medium heat.
  • Add diced pears, brown sugar (or honey), lemon juice, and thyme.
  • Cook 5–7 minutes until pears soften and the mixture thickens slightly.
  • Remove from heat and cool slightly.

3. Assemble the Tartlets

  • Add a small spoonful of pear mixture into each puff pastry cup.
  • Top with crumbled blue cheese.
  • Sprinkle with walnuts or pecans, if using.
  • Brush pastry edges lightly with egg wash.

4. Bake
