- 1 sheet puff pastry, thawed
- 2 ripe pears, peeled and diced

- 2 tablespoons brown sugar or honey

- 4 oz blue cheese, crumbled

1. Prep the Puff Pastry
- Preheat oven to 400°F (200°C).
- Cut the puff pastry into small squares (about 2 inches).
- Press the squares into a mini muffin tin to form little cups.
2. Cook the Pear Filling
- In a skillet, melt butter over medium heat.
- Add diced pears, brown sugar (or honey), lemon juice, and thyme.
- Cook 5–7 minutes until pears soften and the mixture thickens slightly.
- Remove from heat and cool slightly.
3. Assemble the Tartlets
- Add a small spoonful of pear mixture into each puff pastry cup.
- Top with crumbled blue cheese.
- Sprinkle with walnuts or pecans, if using.
- Brush pastry edges lightly with egg wash.
4. Bake
- Bake for 12–15 minutes, until the pastry is golden and puffy and the cheese is melted.
