Ingredients
For the muffins:
• 1 ¾ cups all-purpose flour (or gluten-free 1:1 blend)
• ½ cup granulated sugar
• 2 tsp baking powder
• ½ tsp salt
• 1 tsp cinnamon
• 1 egg
• ⅔ cup milk (dairy or plant-based)
• ¼ cup vegetable oil or melted butter
• 1 tsp vanilla extract
For the filling:
• 4 oz cream cheese, softened (or dairy-free alternative)
• ¼ cup brown sugar
• 1 tbsp milk or cream
• ½ tsp vanilla extract
• ½ tsp cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well.
- Make the muffin batter: In a bowl, whisk flour, sugar, baking powder, salt, and 1 tsp cinnamon. In another bowl, beat egg, then mix in milk, oil, and vanilla. Gradually add dry ingredients, mixing until just combined.
- Make the filling: Beat cream cheese, brown sugar, milk, vanilla, and ½ tsp cinnamon until smooth and creamy.
- Fill each muffin cup halfway with batter. Drop 1 tsp filling into the center of each. Top with remaining batter, sealing around the edges.
- Bake 18–22 minutes, until golden and a toothpick comes out clean.
- Cool slightly before removing. Serve warm for that gooey center!
