• 1 cup mascarpone cheese (or dairy-free alternative)
• ½ cup canned pumpkin puree (unsweetened)
• 2 tbsp maple syrup or honey
• ½ tsp vanilla extract
• ½ tsp pumpkin pie spice
• ½ cup strong brewed coffee or espresso, cooled
• 8–10 ladyfinger cookies (or gluten-free sponge fingers)
• Optional: whipped cream, cinnamon, or crushed pecans for topping


Instructions

  1. In a bowl, mix mascarpone, pumpkin puree, maple syrup, vanilla, and pumpkin pie spice until smooth and creamy.
  2. Pour cooled coffee into a shallow dish.
  3. Quickly dip each ladyfinger into the coffee—one second per side—don’t oversoak or they’ll get mushy.
  4. Arrange half the cookies in the bottom of 2–4 serving glasses or jars.
  5. Spoon half the pumpkin mixture over the top.
  6. Repeat layers: more dipped ladyfingers, then remaining pumpkin cream.
  7. Smooth the tops and chill for at least 10 minutes (or enjoy immediately for a soft, mousse-like texture).
  8. Before serving, add a dollop of whipped cream and a sprinkle of cinnamon or chopped pecans if desired.
