What Makes Brioche So Special?

Brioche is a French-style enriched bread made with:

  • Butter
  • Eggs
  • Milk
  • A touch of sugar

The result is a soft, slightly sweet dough with a rich texture that melts in your mouth.

When combined with creamy cheese and fruit, it becomes an unforgettable treat.

Ingredients for Blueberry Cheese Brioche Buns

For the Brioche Dough

  • 3 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3 large eggs (room temperature)
  • 1/2 cup warm milk
  • 1/2 cup unsalted butter (softened, cubed)

For the Cream Cheese Filling

  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

For the Blueberry Filling

  • 1 cup fresh or frozen blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon sugar

For Egg Wash

  • 1 egg
  • 1 tablespoon milk

Optional:

  • Powdered sugar for dusting

Step-by-Step Instructions

Step 1: Activate the Yeast

In a small bowl:

  • Combine warm milk and 1 teaspoon sugar.
  • Sprinkle yeast on top.
  • Let sit 5–10 minutes until foamy.

This ensures the yeast is active.

Step 2: Make the Dough

In a large bowl, combine:

  • Flour
  • Sugar
  • Salt

Add:

  • Yeast mixture
  • Eggs

Mix until dough begins to form.

Gradually add softened butter, mixing until fully incorporated.

Knead for 8–10 minutes until smooth and elastic.

Dough will be soft and slightly sticky — that’s normal.

Step 3: First Rise

Place dough in lightly greased bowl.

Cover and let rise in warm place for 1–1.5 hours, or until doubled in size.

Step 4: Prepare the Fillings

Cream Cheese Filling

Beat together:

  • Cream cheese
  • Sugar
  • Vanilla

Until smooth and creamy.

Blueberry Mixture

In a small bowl, toss:

  • Blueberries
  • Cornstarch
  • Sugar

This prevents excess juice from leaking.

Step 5: Shape the Buns

Punch down risen dough.

Divide into 8–10 equal pieces.

For each piece:

  1. Flatten into a circle.
  2. Add 1 tablespoon cream cheese filling.
  3. Add 1 tablespoon blueberries.
  4. Carefully fold edges over filling and seal.
  5. Place seam-side down on lined baking sheet.

Leave space between buns.

Step 6: Second Rise

Cover loosely and let rise 30–45 minutes until puffy.

Step 7: Apply Egg Wash

Whisk egg and milk.

Brush tops gently for golden shine.

Step 8: Bake

Preheat oven to 350°F (175°C).

Bake 18–22 minutes until golden brown.

Internal temperature should reach about 190°F (88°C).

Let cool slightly before serving.

Tips for Perfect Brioche Buns

Use Room Temperature Ingredients

Helps dough develop properly.

Don’t Overfill

Too much filling may leak.

Seal Edges Well

Pinch tightly to prevent bursting.

Be Patient with Rising

Proper proofing ensures fluffy texture.

Flavor Variations

Lemon Blueberry Brioche

Add lemon zest to cream cheese filling.

Mixed Berry Version

Use raspberries and blackberries.

Chocolate Blueberry

Add mini chocolate chips inside.

Almond Twist

Make-Ahead and Storage

Room Temperature

Refrigerator

Keep up to 5 days (reheat before serving).

Freezer

Freeze cooled buns for up to 2 months.

Reheat at 300°F (150°C) for 8–10 minutes.

Why These Buns Are So Soft

The softness comes from:

  • High butter content
  • Eggs enriching the dough
  • Proper kneading
  • Adequate proofing

This creates a light yet rich crumb.

Common Mistakes to Avoid

Skipping Kneading

Leads to dense buns.

Using Cold Butter

Prevents proper incorporation.

Rushing Rise Time

Results in heavy texture.

They look elegant and taste incredible.
