Apple Cinnamon Pecan Bread: A Moist, Cozy, Fall-Inspired Loaf You’ll Want All Year

Ingredients

• 1 ¾ cups all-purpose flour (or gluten-free 1:1 blend)
• ¾ cup granulated sugar
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• ½ tsp nutmeg (optional)
• 2 eggs
• ⅓ cup vegetable oil or melted coconut oil
• ½ cup unsweetened applesauce
• 1 tsp vanilla extract
• 1 ½ cups peeled and diced apples (about 2 medium)
• ½ cup chopped pecans (plus extra for topping)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. In a bowl, whisk flour, sugar, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix eggs, oil, applesauce, and vanilla until smooth.
  4. Gradually add dry ingredients to wet, mixing until just combined.
  5. Fold in diced apples and ½ cup pecans.
  6. Pour batter into the loaf pan and sprinkle extra pecans on top.
  7. Bake 50–60 minutes, until golden and a toothpick comes out clean.
  8. Let cool in the pan 10 minutes, then transfer to a wire rack.

Serve warm with butter or turn leftovers into French toast!
