Ingredients
• 1 ¾ cups all-purpose flour (or gluten-free 1:1 blend)
• ¾ cup granulated sugar
• 1 tsp baking soda
• ½ tsp salt
• 1 tsp cinnamon
• ½ tsp nutmeg (optional)
• 2 eggs
• ⅓ cup vegetable oil or melted coconut oil
• ½ cup unsweetened applesauce
• 1 tsp vanilla extract
• 1 ½ cups peeled and diced apples (about 2 medium)
• ½ cup chopped pecans (plus extra for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
- In a bowl, whisk flour, sugar, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix eggs, oil, applesauce, and vanilla until smooth.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in diced apples and ½ cup pecans.
- Pour batter into the loaf pan and sprinkle extra pecans on top.
- Bake 50–60 minutes, until golden and a toothpick comes out clean.
- Let cool in the pan 10 minutes, then transfer to a wire rack.
