Apple Pecan Cake with Caramel Glaze – A Cozy Fall Dessert

Ingredients

For the cake:
• 1 ½ cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tsp baking soda
• ½ tsp cinnamon
• ¼ tsp nutmeg
• ¼ tsp salt
• 2 eggs
• ⅓ cup melted butter or coconut oil
• ⅓ cup brown sugar or coconut sugar
• ⅓ cup maple syrup
• 1 tsp vanilla extract
• 1 ½ cups peeled and finely diced apples (about 2 medium)
• ½ cup chopped pecans (plus extra for topping)

For the caramel glaze:
• 3 tbsp butter or coconut oil
• 3 tbsp brown sugar
• 2 tbsp heavy cream or full-fat coconut milk
• ½ tsp vanilla extract
• Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch round or square baking pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat eggs, then mix in melted butter, brown sugar, maple syrup, and vanilla until smooth.
  4. Gradually add dry ingredients and stir until just combined.
  5. Fold in diced apples and ½ cup pecans.
  6. Pour batter into the pan and smooth the top. Sprinkle with extra chopped pecans.
  7. Bake 30–35 minutes, until a toothpick inserted in the center comes out clean.
  8. Let cool slightly while you make the glaze.

Make the caramel glaze:
9. In a small saucepan over medium heat, melt butter. Stir in brown sugar, cream, vanilla, and salt. Simmer 2–3 minutes, stirring constantly, until thickened and glossy.
10. Drizzle warm caramel glaze over the warm cake. Let set 10–15 minutes before slicing.

Serve with vanilla ice cream or whipped cream for the ultimate dessert experience!
