Apple-Pumpkin-Pecan Pie: A Triple-Threat Fall Dessert That Combines the Best of Autumn in One Crust

Ingredients

• 1 (9-inch) pie crust (homemade or store-bought) • 2 cups diced apples • 1 cup pumpkin puree • 1 cup chopped pecans • ¾ cup brown sugar • ½ cup granulated sugar • 3 eggs • ½ cup corn syrup • ½ cup melted butter • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 425°F
  2. Place pie crust in 9-inch pie pan
  3. In large bowl, mix diced apples with ¼ cup brown sugar
  4. Spread apple mixture in bottom of crust
  5. In separate bowl, whisk pumpkin puree with ¼ cup brown sugar
  6. Add pumpkin pie spice, cinnamon, and nutmeg
  7. Pour pumpkin mixture over apples
  8. In another bowl, beat eggs and remaining sugars
  9. Add corn syrup, melted butter, and vanilla
  10. Stir in chopped pecans and salt
  11. Pour pecan mixture over pumpkin layer
  12. Bake 15 minutes at 425°F
  13. Reduce heat to 350°F and bake 35-40 minutes
  14. Center should be set when done
  15. Cool completely before serving
