Ingredients
• 1 (9-inch) pie crust (homemade or store-bought) • 2 cups diced apples • 1 cup pumpkin puree • 1 cup chopped pecans • ¾ cup brown sugar • ½ cup granulated sugar • 3 eggs • ½ cup corn syrup • ½ cup melted butter • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 1 tsp vanilla extract
Instructions
- Preheat oven to 425°F
- Place pie crust in 9-inch pie pan
- In large bowl, mix diced apples with ¼ cup brown sugar
- Spread apple mixture in bottom of crust
- In separate bowl, whisk pumpkin puree with ¼ cup brown sugar
- Add pumpkin pie spice, cinnamon, and nutmeg
- Pour pumpkin mixture over apples
- In another bowl, beat eggs and remaining sugars
- Add corn syrup, melted butter, and vanilla
- Stir in chopped pecans and salt
- Pour pecan mixture over pumpkin layer
- Bake 15 minutes at 425°F
- Reduce heat to 350°F and bake 35-40 minutes
- Center should be set when done
- Cool completely before serving
