Ingredients
• 6 cups mixed greens • 2 apples, cored and sliced • ½ cup walnuts, chopped • ¼ cup red onion, thinly sliced • ¼ cup dried cranberries • 2 tbsp blue cheese, crumbled (optional) • 2 hard-boiled eggs, sliced (optional)
FOR DRESSING: • 3 tbsp apple cider vinegar • 2 tbsp olive oil • 1 tbsp honey • 1 tsp Dijon mustard • Salt and pepper to taste
Instructions
- Wash and dry mixed greens thoroughly
- Core and slice apples, toss with lemon juice to prevent browning
- Chop walnuts and slice red onion thinly
- In small bowl, whisk together vinegar, olive oil, honey, and mustard
- Season dressing with salt and pepper
- In large bowl, combine mixed greens and apple slices
- Add walnuts, red onion, and dried cranberries
- Add blue cheese and hard-boiled eggs if using
- Drizzle with dressing and toss gently
- Serve immediately on chilled plates
