Ingredients

• 6 cups mixed greens • 2 apples, cored and sliced • ½ cup walnuts, chopped • ¼ cup red onion, thinly sliced • ¼ cup dried cranberries • 2 tbsp blue cheese, crumbled (optional) • 2 hard-boiled eggs, sliced (optional)

FOR DRESSING: • 3 tbsp apple cider vinegar • 2 tbsp olive oil • 1 tbsp honey • 1 tsp Dijon mustard • Salt and pepper to taste


Instructions

  1. Wash and dry mixed greens thoroughly
  2. Core and slice apples, toss with lemon juice to prevent browning
  3. Chop walnuts and slice red onion thinly
  4. In small bowl, whisk together vinegar, olive oil, honey, and mustard
  5. Season dressing with salt and pepper
  6. In large bowl, combine mixed greens and apple slices
  7. Add walnuts, red onion, and dried cranberries
  8. Add blue cheese and hard-boiled eggs if using
  9. Drizzle with dressing and toss gently
  10. Serve immediately on chilled plates
