Authentic German Potato Pancakes (Kartoffelpuffer) – Crispy, Golden, and Delicious!

Ingredients

• 2 lbs russet potatoes, peeled • 1 onion, grated • 2 eggs • 3 tbsp all-purpose flour • 1 tsp salt • ½ tsp black pepper • ¼ tsp nutmeg • ½ cup vegetable oil for frying • 2 tbsp butter • Applesauce for serving • Sour cream for serving


Instructions

  1. Grate potatoes and onion on large holes
  2. Place in colander and press out excess moisture
  3. In large bowl, mix grated potatoes and onion
  4. Add eggs, flour, salt, pepper, and nutmeg
  5. Mix until well combined
  6. Heat oil and butter in large skillet
  7. Drop rounded ¼ cup portions into hot oil
  8. Flatten slightly with spatula
  9. Cook 3-4 minutes per side until golden brown
  10. Drain on paper towels
  11. Serve immediately with applesauce and sour cream
  12. Keep warm in 200°F oven while cooking remaining
