Ingredients
• 2 lbs russet potatoes, peeled • 1 onion, grated • 2 eggs • 3 tbsp all-purpose flour • 1 tsp salt • ½ tsp black pepper • ¼ tsp nutmeg • ½ cup vegetable oil for frying • 2 tbsp butter • Applesauce for serving • Sour cream for serving
Instructions
- Grate potatoes and onion on large holes
- Place in colander and press out excess moisture
- In large bowl, mix grated potatoes and onion
- Add eggs, flour, salt, pepper, and nutmeg
- Mix until well combined
- Heat oil and butter in large skillet
- Drop rounded ¼ cup portions into hot oil
- Flatten slightly with spatula
- Cook 3-4 minutes per side until golden brown
- Drain on paper towels
- Serve immediately with applesauce and sour cream
- Keep warm in 200°F oven while cooking remaining
