Baileys Chocolate Cheesecake Trifle: A Decadent, No-Bake Showstopper

  • Author: WAFA LI

Ingredients

• 1 store-bought or homemade chocolate cake (8–9 inch), sliced into layers
• 16 oz cream cheese, softened (2 blocks)
• ½ cup granulated sugar
• 1 tsp vanilla extract
• 1 cup heavy cream or full-fat coconut cream (cold)
• ⅓ cup Baileys Irish Cream (plus extra for drizzling)
• 1 tbsp instant coffee or espresso powder (dissolved in 1 tsp hot water)
• 1 cup chocolate chips or chopped chocolate (melted)
• Whipped cream or Cool Whip (for topping)
• Chocolate shavings or cocoa powder (for garnish)

Instructions

  1. In a bowl, beat cream cheese, sugar, and vanilla until smooth.
  2. In another bowl, whip cold heavy cream to stiff peaks. Gently fold into cream cheese mixture.
  3. Stir in Baileys, coffee mixture, and melted chocolate until fully blended.
  4. In a trifle dish or clear glasses, layer:
→ Slices of chocolate cake (cut to fit)
→ Drizzle of extra Baileys (optional)
    → Half the cheesecake filling
  5. Repeat layers: cake + Baileys + remaining filling.
  6. Top with whipped cream. Sprinkle with chocolate shavings or dust with cocoa.
  7. Chill at least 4 hours (or overnight) to set.

Serve chilled—each spoonful is rich, creamy, and perfectly boozy!

💡 Make ahead: Assemble up to 2 days in advance—store covered in the fridge.
