Ingredients
• 1 store-bought or homemade chocolate cake (8–9 inch), sliced into layers
• 16 oz cream cheese, softened (2 blocks)
• ½ cup granulated sugar
• 1 tsp vanilla extract
• 1 cup heavy cream or full-fat coconut cream (cold)
• ⅓ cup Baileys Irish Cream (plus extra for drizzling)
• 1 tbsp instant coffee or espresso powder (dissolved in 1 tsp hot water)
• 1 cup chocolate chips or chopped chocolate (melted)
• Whipped cream or Cool Whip (for topping)
• Chocolate shavings or cocoa powder (for garnish)
Instructions
- In a bowl, beat cream cheese, sugar, and vanilla until smooth.
- In another bowl, whip cold heavy cream to stiff peaks. Gently fold into cream cheese mixture.
- Stir in Baileys, coffee mixture, and melted chocolate until fully blended.
- In a trifle dish or clear glasses, layer:
→ Slices of chocolate cake (cut to fit)
→ Drizzle of extra Baileys (optional)
→ Half the cheesecake filling - Repeat layers: cake + Baileys + remaining filling.
- Top with whipped cream. Sprinkle with chocolate shavings or dust with cocoa.
- Chill at least 4 hours (or overnight) to set.
