Baked Apple Cider Donuts: A Soft, Spiced Fall Treat Without the Fry

Ingredients

• 1 cup apple cider (reduced to ¼ cup – simmer 1 cup in a pan for 15–20 mins)
• 1 cup almond flour
• ½ cup oat flour (gluten-free if needed)
• ⅓ cup maple syrup
• 1 egg
• 2 tbsp melted coconut oil or butter
• 1 tsp vanilla extract
• 1 tsp cinnamon
• ½ tsp baking powder
• ¼ tsp nutmeg
• ¼ tsp salt

For the cinnamon-sugar coating (optional):
• 2 tbsp melted butter or coconut oil
• ¼ cup coconut sugar
• 1 tsp cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan or use a silicone mold.
  2. Reduce 1 cup apple cider to ¼ cup by simmering in a small saucepan. Let cool slightly.
  3. In a bowl, whisk together reduced cider, maple syrup, egg, coconut oil, and vanilla.
  4. In another bowl, mix almond flour, oat flour, cinnamon, baking powder, nutmeg, and salt.
  5. Add dry ingredients to wet and stir until smooth.
  6. Spoon batter into donut cavities, filling about ¾ full.
  7. Bake 10–12 minutes, until golden and a toothpick comes out clean.
  8. Let cool 5 minutes, then remove from pan.
  9. Optional: Brush warm donuts with melted butter, then roll in cinnamon-sugar mix.
  10. Serve warm or at room temperature—best the same day!
