Ingredients
• 1 cup apple cider (reduced to ¼ cup – simmer 1 cup in a pan for 15–20 mins)
• 1 cup almond flour
• ½ cup oat flour (gluten-free if needed)
• ⅓ cup maple syrup
• 1 egg
• 2 tbsp melted coconut oil or butter
• 1 tsp vanilla extract
• 1 tsp cinnamon
• ½ tsp baking powder
• ¼ tsp nutmeg
• ¼ tsp salt
For the cinnamon-sugar coating (optional):
• 2 tbsp melted butter or coconut oil
• ¼ cup coconut sugar
• 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan or use a silicone mold.
- Reduce 1 cup apple cider to ¼ cup by simmering in a small saucepan. Let cool slightly.
- In a bowl, whisk together reduced cider, maple syrup, egg, coconut oil, and vanilla.
- In another bowl, mix almond flour, oat flour, cinnamon, baking powder, nutmeg, and salt.
- Add dry ingredients to wet and stir until smooth.
- Spoon batter into donut cavities, filling about ¾ full.
- Bake 10–12 minutes, until golden and a toothpick comes out clean.
- Let cool 5 minutes, then remove from pan.
- Optional: Brush warm donuts with melted butter, then roll in cinnamon-sugar mix.
- Serve warm or at room temperature—best the same day!
