Ingredients
• 1½ cups (190g) all-purpose flour
• ½ cup (100g) granulated sugar
• 1½ tsp baking powder
• ½ tsp baking soda
• 1½ tsp ground cinnamon
• ¼ tsp salt
• 1 large egg
• ⅓ cup (80ml) milk (dairy or unsweetened almond)
• ¼ cup (60ml) melted butter or coconut oil
• 1 tsp vanilla extract
• 1½ cups (225g) peeled & finely diced apples (e.g., Honeycrisp or Granny Smith)
• Topping: 2 tbsp melted butter + ¼ cup (50g) sugar + 1 tsp cinnamon
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
- In a bowl, whisk flour, sugar, baking powder, baking soda, 1½ tsp cinnamon, and salt.
- In another bowl, beat egg, milk, melted butter, and vanilla. Stir into dry ingredients until just combined. Fold in apples.
- Scoop ¼-cup mounds onto sheet, spacing 2″ apart. Flatten slightly into 2½”-wide rounds.
- Bake 14–16 min until golden and a toothpick comes out clean.
- While warm, brush tops with melted butter, then dip or sprinkle generously with cinnamon-sugar mix.
- Cool 5 min—best served same day while tender and fragrant!
