Fluffy, gooey rolls swirled with cinnamon and sweet ripe banana goodness!
Ingredients
For the Dough:
2½ cups flour (plus more for dusting)
1 tbsp baking powder
½ tsp salt
1 ripe banana, mashed
⅓ cup plain Greek yogurt
¼ cup maple syrup or honey
¼ cup milk of choice
2 tbsp melted coconut oil or butter
1 tsp vanilla extract
For the Filling:
2 tbsp softened coconut oil or butter
¼ cup coconut sugar or brown sugar
2 tsp ground cinnamon
For the Glaze (optional):
½ cup powdered sugar
1–2 tbsp milk
½ tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C) and grease a baking dish.
In a large bowl, mix flour, baking powder, and salt.
In another bowl, combine mashed banana, yogurt, syrup, milk, oil, and vanilla.
Add wet mixture to dry and stir until dough forms—knead gently if needed.
Roll dough into a rectangle on a floured surface.
Spread with softened butter, sprinkle cinnamon sugar evenly over top.
Roll up tightly from the long end and slice into 8–10 rolls.
Place rolls in baking dish and bake for 22–25 minutes until golden.
Whisk glaze ingredients and drizzle over warm rolls.
