Ingredients
1 ripe banana, mashed
½ cup softened butter or coconut oil
⅓ cup maple syrup or coconut sugar
1 egg
1 tsp vanilla extract
1¼ cups flour (all-purpose or whole wheat)
½ tsp baking soda
¼ tsp salt
½ cup white chocolate chips
½ cup crushed vanilla wafers
Optional: 2 tbsp instant banana pudding mix (for extra flavor)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
In a bowl, beat mashed banana, butter, maple syrup, egg, and vanilla until smooth.
Add flour, baking soda, and salt. Stir until a soft dough forms.
Fold in white chocolate chips and crushed vanilla wafers.
Scoop dough by tablespoons onto baking sheet.
Bake 9–11 minutes, until edges are golden and centers are soft.
