Banana Pudding (Classic, Creamy & Always a Crowd Favorite)

Ingredients

  • ¾ cup (150g) granulated sugar
  • ⅓ cup (40g) all-purpose flour
  • ¼ tsp salt
  • 3 large eggs, separated
  • 2½ cups whole milk
  • 2 tbsp unsalted butter
  • 1½ tsp vanilla extract
  • 1 box (11 oz) vanilla wafers
  • 45 ripe bananas, sliced
  • Optional: whipped cream or meringue topping

Instructions

Stovetop Method (Traditional):

  1. Make custard: In a saucepan, whisk sugar, flour, and salt. Whisk in egg yolks and milk until smooth.
  2. Cook: Bring to a gentle boil over medium heat, stirring constantly, until thickened (~8–10 min).
  3. Finish: Remove from heat. Stir in butter and vanilla. Cool slightly (cover with plastic wrap directly on surface to prevent skin).

Layer pudding:

  1. In a 2-qt glass dish, arrange a layer of vanilla wafers. Top with banana slices. Spoon half the custard over top. Repeat layers.
  2. Top: Finish with wafers and/or bananas.

Choose your topping:

  • Whipped cream: Spread over top; chill 4+ hours.
  • Meringue (optional): Beat egg whites with 2 tbsp sugar until stiff peaks form. Spread over warm pudding. Bake at 350°F (175°C) for 10–12 min until golden.
💡 Pro Tips:
– Use slightly underripe bananas to prevent browning.
– Assemble just before serving if possible—bananas soften over time.
– For extra flavor, add a splash of rum or almond extract to custard!
