Berry Cream Cheese Muffins: A Burst of Juicy Berries with a Creamy Center

Ingredients

For the Muffins:

1½ cups all-purpose flour

¾ cup sugar

2 tsp baking powder

¼ tsp baking soda

½ tsp salt

1 egg

½ cup milk

⅓ cup vegetable oil

1 tsp vanilla extract

1 cup mixed berries (blueberries, raspberries, or strawberries)

For the Cream Cheese Filling:

4 oz cream cheese, softened

2 tbsp sugar

½ tsp vanilla extract

Topping (Optional):

2 tbsp sugar


Instructions

Preheat oven to 375°F (190°C). Line or grease a muffin tin.

In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.

In another bowl, mix egg, milk, oil, and vanilla. Add wet ingredients to dry ingredients and stir gently until just combined.

In a small bowl, mix cream cheese, sugar, and vanilla until smooth.

Gently fold berries into the muffin batter.

Fill muffin cups halfway, add a spoonful of cream cheese mixture, then top with remaining batter.

Sprinkle sugar on top for a sweet finish.

Bake 18–22 minutes until golden and a toothpick comes out clean. Cool before serving.
