Ingredients
1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar, plus more for rolling
1 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp salt
3/4 cup finely chopped nuts (pecans or walnuts work best)
Instructions
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a bowl, beat butter and 1/2 cup powdered sugar until creamy and smooth. Stir in vanilla.
Gradually mix in flour, salt, and chopped nuts until a soft dough forms.
Roll dough into 1-inch balls and place on the baking sheet.
Bake for 18–20 minutes or until bottoms are lightly golden but tops stay pale.
Let cool for 5 minutes, then roll warm cookies in powdered sugar. Once cooled completely, roll again for that extra snowy finish.
