Ingredients

• ¾ cup (1½ sticks) unsalted butter, softened
• ¾ cup granulated sugar
• ½ cup light brown sugar, packed
• 1 large egg
• 1 tsp vanilla extract
• 2¼ cups all-purpose flour (or 2 cups almond flour + ¼ cup coconut flour for keto)
• ½ tsp baking soda
• ¼ tsp baking powder
• ½ tsp cream of tartar (secret to softness!)
• ¼ tsp salt
• 2 tbsp milk or cream (optional—boosts tenderness)

For rolling:
• ¼ cup granulated sugar + 1–2 tsp festive sprinkles (mix in a shallow bowl)


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  2. In a large bowl, beat butter and both sugars until light and fluffy (~3 mins). Add egg and vanilla; mix well.
  3. Whisk flour, baking soda, baking powder, cream of tartar, and salt. Gradually add to wet ingredients, mixing just until combined. Stir in milk if dough feels dry (it should be soft but not sticky).
  4. Scoop 1½-tbsp balls. Roll in sugar-sprinkle mix; place 2″ apart on sheets.
  5. Bake 9–10 mins—edges just set, centers still soft (they’ll firm as they cool).
  6. Cool on sheet 5 mins, then transfer to a rack. Store in an airtight container with a slice of bread to keep soft!
