Soft, zesty cookies bursting with juicy blackberries and sweet lemon glaze!
Ingredients
1 cup unsalted butter, softened
¾ cup granulated sugar
¼ cup brown sugar
1 large egg
1 tbsp lemon zest
2 tbsp lemon juice
2¼ cups all-purpose flour
½ tsp baking soda
½ tsp salt
1 cup fresh blackberries (halved if large)
Optional Glaze: ½ cup powdered sugar + 1–2 tsp lemon juice
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
Cream butter and sugars until light and fluffy. Beat in egg, lemon zest, and juice.
In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into wet ingredients.
Gently fold in blackberries. Chill dough for 20 minutes.
Scoop dough onto baking sheet. Bake 11–13 minutes until edges are set.
Cool, then drizzle with lemon glaze if desired.
