- ¾ cup powdered sugar
- 1–2 tbsp milk or cream
- ½ tsp vanilla extract
Instructions
- Prep: Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan or line with parchment paper.
- Mix dry ingredients: In a bowl, whisk flour, sugar, baking powder, baking soda, salt, cinnamon, and lemon zest.
- Toss blackberries: Gently fold blackberries into dry mixture (this helps prevent sinking).
- Make wet mixture: In another bowl, whisk melted butter, eggs, sour cream, and vanilla.
- Combine: Pour wet ingredients into dry; stir just until moistened (do not overmix—batter will be thick).
- Bake 50–60 minutes, until a toothpick inserted near center comes out clean (a few crumbs are fine).
- Cool in pan 10 minutes, then transfer to a wire rack.
- Glaze (optional): Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled loaf.
