Ingredients
• 2½ cups all-purpose flour • 1½ cups granulated sugar • 1 cup butter, softened • 2 eggs • 1 cup buttermilk • 2 oz blue food coloring • 1 tsp vanilla extract • 1 tsp white vinegar • 1 tsp baking soda • ½ tsp salt
FOR CREAM CHEESE FROSTING: • 8 oz cream cheese, softened • ½ cup butter, softened • 4 cups powdered sugar • 1 tsp vanilla extract • 2-3 tbsp heavy cream
Instructions
- Preheat oven to 350°F
- Grease and flour two 9-inch round cake pans
- Cream butter and sugar until fluffy
- Add eggs one at a time
- Mix in buttermilk, food coloring, and vanilla
- Combine flour, baking soda, and salt
- Alternate adding flour mixture and buttermilk
- Add vinegar and mix until combined
- Divide batter between pans
- Bake 25-30 minutes until toothpick comes clean
- Cool completely before frosting
- Beat cream cheese and butter until smooth
- Gradually add powdered sugar
- Add vanilla and cream until spreadable
- Frost cake layers and decorate
