Ingredients
• 1 cup butter • 2 cups old-fashioned oats • 1 cup all-purpose flour • 1 cup pumpkin puree • ½ cup brown sugar • ¼ cup granulated sugar • 1 egg • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ½ tsp baking soda • ¼ tsp salt • ½ cup chopped pecans
Instructions
- Preheat oven to 350°F
- Line baking sheets with parchment paper
- Brown butter in saucepan until golden and nutty
- Remove from heat and let cool 5 minutes
- In large bowl, mix browned butter with both sugars
- Add pumpkin, egg, and vanilla, mix well
- Combine oats, flour, spices, baking soda, and salt
- Gradually add oat mixture to wet ingredients
- Fold in chopped pecans
- Drop rounded tablespoons onto baking sheets
- Bake 12-15 minutes until edges are golden
- Cool on baking sheets 5 minutes
- Transfer to wire racks to cool completely
