For the streusel topping:

  • 2 tbsp packed brown sugar
  • 1 tbsp all-purpose flour
  • ¼ tsp ground cinnamon
  • 1 tbsp cold unsalted butter, cubed

For the banana bread:

  • 1½ cups (190g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 3 ripe bananas, mashed (about 1½ cups)
  • ½ cup (1 stick / 115g) unsalted butter, melted and cooled
  • ¾ cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan.
  2. Make streusel: In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter with a fork until crumbly. Set aside.
  3. Mix dry ingredients: Whisk flour, baking soda, salt, and cinnamon.
  4. Make batter: In a large bowl, stir mashed bananas, melted butter, brown sugar, egg, and vanilla until smooth. Fold in dry ingredients just until combined (do not overmix).
  5. Assemble: Pour batter into loaf pan. Sprinkle streusel evenly over top.
  6. Bake 55–65 minutes, until a toothpick inserted near center comes out clean.
  7. Cool in pan 10 minutes, then transfer to a wire rack.

– Use very ripe bananas (lots of brown spots!) for maximum sweetness and moisture.
– For extra depth, add ½ tsp nutmeg or a handful of chopped walnuts to the batter.
