For the streusel topping:

For the banana bread:
- 1½ cups (190g) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- 3 ripe bananas, mashed (about 1½ cups)
- ½ cup (1 stick / 115g) unsalted butter, melted and cooled
- ¾ cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Prep: Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan.
- Make streusel: In a small bowl, mix brown sugar, flour, and cinnamon. Cut in butter with a fork until crumbly. Set aside.
- Mix dry ingredients: Whisk flour, baking soda, salt, and cinnamon.
- Make batter: In a large bowl, stir mashed bananas, melted butter, brown sugar, egg, and vanilla until smooth. Fold in dry ingredients just until combined (do not overmix).
- Assemble: Pour batter into loaf pan. Sprinkle streusel evenly over top.
- Bake 55–65 minutes, until a toothpick inserted near center comes out clean.
- Cool in pan 10 minutes, then transfer to a wire rack.
