Ingredients
• 2 cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tbsp baking powder
• ½ tsp salt
• 1 tsp sugar (optional, for slight sweetness)
• ⅓ cup cold butter, cubed (plus extra 4 tbsp for “swimming”)
• ¾ cup milk (dairy or plant-based)
• 1 tsp apple cider vinegar or lemon juice (for flakiness)
• Optional: 1 tbsp honey or garlic powder (for flavor twist)
Instructions
- Preheat oven to 450°F (230°C). Grease a 9-inch cast-iron skillet or baking dish.
- In a bowl, whisk flour, baking powder, salt, and sugar.
- Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- In a small bowl, mix milk and vinegar. Let sit 1 minute (creates buttermilk effect).
- Add milk mixture to dry ingredients. Stir just until dough forms—don’t overmix.
- Turn onto a floured surface and gently pat into a 1-inch thick circle. Cut into 8 wedges or use a biscuit cutter.
- Place biscuits close together in the hot skillet or baking dish.
- The “Swim”: Melt 4 tablespoons of butter and drizzle generously over the tops before baking.
- Bake 12–15 minutes, until golden brown on top and cooked through.
- Brush with more melted butter right after baking. Drizzle with honey or sprinkle with garlic salt if desired.
✨ Serve warm straight from the pan—perfect with fried chicken, gravy, or as a sweet side with jam!
💡 Why they’re special: The butter pools around them as they bake, creating crispy edges and tender centers. Pure comfort!
