Ingredients

• 2 cups all-purpose flour (or gluten-free 1:1 blend)
• 1 tbsp baking powder
• ½ tsp salt
• 1 tsp sugar (optional, for slight sweetness)
• ⅓ cup cold butter, cubed (plus extra 4 tbsp for “swimming”)
• ¾ cup milk (dairy or plant-based)
• 1 tsp apple cider vinegar or lemon juice (for flakiness)
• Optional: 1 tbsp honey or garlic powder (for flavor twist)


Instructions

  1. Preheat oven to 450°F (230°C). Grease a 9-inch cast-iron skillet or baking dish.
  2. In a bowl, whisk flour, baking powder, salt, and sugar.
  3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. In a small bowl, mix milk and vinegar. Let sit 1 minute (creates buttermilk effect).
  5. Add milk mixture to dry ingredients. Stir just until dough forms—don’t overmix.
  6. Turn onto a floured surface and gently pat into a 1-inch thick circle. Cut into 8 wedges or use a biscuit cutter.
  7. Place biscuits close together in the hot skillet or baking dish.
  8. The “Swim”: Melt 4 tablespoons of butter and drizzle generously over the tops before baking.
  9. Bake 12–15 minutes, until golden brown on top and cooked through.
  10. Brush with more melted butter right after baking. Drizzle with honey or sprinkle with garlic salt if desired.

Serve warm straight from the pan—perfect with fried chicken, gravy, or as a sweet side with jam!
