Candied Pecans

Ingredients

• 2 cups pecan halves
• ¼ cup granulated sugar
• ¼ cup brown sugar
• 1 egg white (or 2 tbsp aquafaba for vegan)
• ½ tsp vanilla extract
• ½ tsp ground cinnamon
• ¼ tsp salt
• Optional: pinch of cayenne for heat


Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk egg white until frothy. Add vanilla and beat briefly.
  3. Add pecans and toss until evenly coated.
  4. In a separate bowl, mix sugars, cinnamon, salt, and cayenne (if using).
  5. Pour sugar mixture over pecans and stir until fully coated.
  6. Spread in a single layer on the baking sheet.
  7. Bake 20–25 minutes, stirring halfway, until golden and crisp.
  8. Let cool completely—they’ll crisp up as they cool. Break apart and store in an airtight container.
