Instructions
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, whisk egg white until frothy. Add vanilla and beat briefly.
- Add pecans and toss until evenly coated.
- In a separate bowl, mix sugars, cinnamon, salt, and cayenne (if using).
- Pour sugar mixture over pecans and stir until fully coated.
- Spread in a single layer on the baking sheet.
- Bake 20–25 minutes, stirring halfway, until golden and crisp.
- Let cool completely—they’ll crisp up as they cool. Break apart and store in an airtight container.
