For the bread:
- 2 cups (250g) all-purpose flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1½ tsp ground cinnamon
- ½ cup (1 stick / 115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup (180ml) buttermilk or whole milk
- 2 cups peeled & finely diced apples (Honeycrisp or Granny Smith)
For the caramel swirl:
- ¼ cup (50g) packed light brown sugar
- 1 tsp ground cinnamon
- 2 tbsp melted butter
- 3 tbsp caramel sauce (store-bought or homemade)
For the salted caramel glaze:
- ½ cup (60g) powdered sugar
- 2–3 tbsp caramel sauce
- Pinch of flaky sea salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan; line with parchment.
- Make batter: In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
In a stand mixer, beat butter and sugars until fluffy (~3 min). Add eggs one at a time, then vanilla.
Alternate adding dry ingredients and buttermilk, beginning and ending with flour. Fold in apples. - Make swirl: Mix brown sugar, cinnamon, melted butter, and 3 tbsp caramel until crumbly.
- Assemble: Spread half the batter into pan. Sprinkle with half the swirl. Top with remaining batter, then remaining swirl. Use a knife to gently marble.
- Bake 55–65 minutes, until a toothpick comes out clean (tent with foil if top browns too quickly).
- Cool in pan 15 min, then transfer to wire rack.
- Glaze: Whisk powdered sugar, caramel, and salt until smooth. Drizzle over cooled loaf.
