For the bread:

  • 2 cups (250g) all-purpose flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ½ cup (1 stick / 115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup (180ml) buttermilk or whole milk
  • 2 cups peeled & finely diced apples (Honeycrisp or Granny Smith)

For the caramel swirl:

  • ¼ cup (50g) packed light brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp melted butter
  • 3 tbsp caramel sauce (store-bought or homemade)

For the salted caramel glaze:

  • ½ cup (60g) powdered sugar
  • 23 tbsp caramel sauce
  • Pinch of flaky sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan; line with parchment.
  2. Make batter: In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
    In a stand mixer, beat butter and sugars until fluffy (~3 min). Add eggs one at a time, then vanilla.
    Alternate adding dry ingredients and buttermilk, beginning and ending with flour. Fold in apples.
  3. Make swirl: Mix brown sugar, cinnamon, melted butter, and 3 tbsp caramel until crumbly.
  4. Assemble: Spread half the batter into pan. Sprinkle with half the swirl. Top with remaining batter, then remaining swirl. Use a knife to gently marble.
  5. Bake 55–65 minutes, until a toothpick comes out clean (tent with foil if top browns too quickly).
  6. Cool in pan 15 min, then transfer to wire rack.
  7. Glaze: Whisk powdered sugar, caramel, and salt until smooth. Drizzle over cooled loaf.
