Ingredients
For the crust:
• 1 cup graham cracker crumbs (or gluten-free cookies)
• 3 tbsp melted butter or coconut oil
• 1 tbsp brown sugar
For the filling:
• ½ cup pumpkin puree (unsweetened)
• 2 tbsp maple syrup or honey
• ½ tsp pumpkin pie spice
• ¼ tsp vanilla extract
For the apple-caramel layer:
• ½ cup diced apples (peeled, small cubes)
• 2 tbsp caramel sauce (plus extra for drizzling)
• 1 tbsp lemon juice (to prevent browning)
For the crunch topping:
• ½ cup crushed cornflakes or crispy rice cereal
• 2 tbsp chopped pecans or walnuts
• 1 tbsp coconut sugar (optional)
Instructions
- Line an 8×8-inch pan with parchment paper.
- Make the crust: Mix graham cracker crumbs, melted butter, and brown sugar. Press firmly into the bottom of the pan. Chill 10 minutes.
- Pumpkin layer: In a bowl, mix pumpkin, maple syrup, pumpkin pie spice, and vanilla. Spread evenly over crust.
- Apple-caramel layer: Toss diced apples with lemon juice and caramel sauce. Spoon over pumpkin layer.
- Crunch topping: Combine crushed cereal, nuts, and coconut sugar. Sprinkle evenly over the top.
- Drizzle with extra caramel. Chill at least 2 hours until firm.
- Lift out using parchment and cut into bars.
