Ingredients
• 3 ripe bananas, mashed • ½ cup butter, softened • ¾ cup granulated sugar • 2 eggs • 1 tsp vanilla extract • 1½ cups all-purpose flour • 1 tsp baking powder • ½ tsp baking soda • ¼ tsp salt • ½ cup buttermilk • ½ cup chopped walnuts • 1 tsp vanilla extract
FOR VANILLA GLAZE: • 1 cup powdered sugar • 2-3 tbsp milk • 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Grease and flour 9×5 inch loaf pan
- Cream butter and sugar until fluffy
- Add eggs and vanilla, beat well
- Mash bananas in separate bowl
- Combine flour, baking powder, baking soda, and salt
- Alternate adding flour mixture and buttermilk to butter mixture
- Fold in mashed bananas and walnuts
- Pour into prepared pan
- Bake 50-60 minutes until toothpick comes clean
- Cool 15 minutes in pan
- Mix powdered sugar, milk, and vanilla for glaze
- Pour glaze over warm cake
- Cool completely before slicing
