Ingredients
• 1 sleeve (about 40) Ritz crackers
• ½ cup (1 stick) unsalted butter
• 1 cup packed brown sugar
• ¼ cup light corn syrup or honey
• ½ tsp vanilla extract
• ½ tsp salt
• 1 cup roasted salted peanuts (or chopped peanut butter cups)
Instructions
- Line a baking sheet with parchment paper or a silicone mat. Arrange Ritz crackers in a single layer.
- In a saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt.
- Bring to a boil and cook exactly 3 minutes, stirring constantly.
- Remove from heat. Stir in vanilla and peanuts.
- Immediately pour mixture evenly over the crackers.
- Bake at 350°F (175°C) for 5–7 minutes, until bubbly and golden.
- Let cool completely (about 30 minutes). Break into pieces and serve!
