Carrot Bars with Maple Frosting: A Moist, Spiced Delight Perfect for Spring and Beyond

Ingredients

• 2 cups all-purpose flour • 1½ tsp baking powder • 1 tsp cinnamon • ½ tsp nutmeg • ¼ tsp salt • 1 cup brown sugar • ½ cup vegetable oil • 2 eggs • 1 tsp vanilla extract • 2 cups grated carrots • ½ cup chopped walnuts • ½ cup raisins (optional)

FOR MAPLE FROSTING: • 8 oz cream cheese, softened • ¼ cup butter, softened • 2 cups powdered sugar • 2-3 tbsp maple syrup • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F
  2. Grease 9×13 inch baking pan
  3. Whisk together flour, baking powder, cinnamon, nutmeg, and salt
  4. In separate bowl, mix brown sugar, oil, eggs, and vanilla
  5. Add flour mixture to wet ingredients, mix until combined
  6. Fold in grated carrots, walnuts, and raisins
  7. Pour into prepared pan
  8. Bake 25-30 minutes until toothpick comes clean
  9. Cool completely before frosting
  10. Beat cream cheese and butter until smooth
  11. Gradually add powdered sugar, maple syrup, and vanilla
  12. Spread frosting over cooled bars
  13. Cut into squares and serve
