Ingredients
• 2 cups all-purpose flour • 1½ tsp baking powder • 1 tsp cinnamon • ½ tsp nutmeg • ¼ tsp salt • 1 cup brown sugar • ½ cup vegetable oil • 2 eggs • 1 tsp vanilla extract • 2 cups grated carrots • ½ cup chopped walnuts • ½ cup raisins (optional)
FOR MAPLE FROSTING: • 8 oz cream cheese, softened • ¼ cup butter, softened • 2 cups powdered sugar • 2-3 tbsp maple syrup • 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F
- Grease 9×13 inch baking pan
- Whisk together flour, baking powder, cinnamon, nutmeg, and salt
- In separate bowl, mix brown sugar, oil, eggs, and vanilla
- Add flour mixture to wet ingredients, mix until combined
- Fold in grated carrots, walnuts, and raisins
- Pour into prepared pan
- Bake 25-30 minutes until toothpick comes clean
- Cool completely before frosting
- Beat cream cheese and butter until smooth
- Gradually add powdered sugar, maple syrup, and vanilla
- Spread frosting over cooled bars
- Cut into squares and serve
