Creamy cheesecake swirls into spiced carrot cake for dreamy dessert perfection.
Ingredients
For the Carrot Cake Layer:
1 cup finely grated carrots
2 large eggs
1/2 cup maple syrup (or coconut sugar)
1/3 cup coconut oil, melted
1/2 tsp vanilla extract
3/4 cup whole wheat flour or almond flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt
For the Cheesecake Layer:
8 oz cream cheese, softened
1/4 cup maple syrup
1 egg
1/2 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease or line an 8×8″ baking pan.
In one bowl, mix carrots, eggs, syrup, oil, and vanilla. Add dry cake ingredients and stir until just combined.
In another bowl, beat cream cheese, syrup, egg, and vanilla until smooth.
Pour carrot cake batter into the pan. Spoon cheesecake mixture on top and swirl with a knife.
Bake for 30–35 minutes or until center is set.
Cool completely, then chill in fridge at least 2 hours before slicing.
