Ingredients
1 cup almond flour
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp baking soda
Pinch of salt
½ cup mashed carrots (about 1 medium carrot)
¼ cup powdered erythritol or monk fruit sweetener
¼ cup melted coconut oil or butter
1 large egg
¼ tsp vanilla extract
Optional: Crushed walnuts or raisins for extra texture
Instructions
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
In a bowl, mix almond flour, cinnamon, nutmeg, baking soda, and salt.
Add mashed carrots, powdered sweetener, melted oil, egg, and vanilla. Stir until well combined.
Fold in optional add-ins like walnuts or raisins.
Scoop small balls of dough onto the baking sheet, spacing them apart.
Flatten slightly with your palm or a spatula.
Bake for 12–15 minutes or until golden around the edges.
