Carrot Cake Roll with Cream Cheese Frosting: A Moist, Flavorful Dessert Delight

Ingredients

• 4 eggs • 1 cup granulated sugar • ½ cup all-purpose flour • ½ tsp baking powder • ½ tsp cinnamon • ¼ tsp salt • 1 cup grated carrots • ½ cup chopped walnuts

FOR CREAM CHEESE FROSTING: • 8 oz cream cheese, softened • ¼ cup butter, softened • 1 cup powdered sugar • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 375°F
  2. Line 15×10 inch jelly roll pan with parchment paper
  3. Beat eggs and sugar until thick and pale
  4. Combine flour, baking powder, cinnamon, and salt
  5. Fold flour mixture into egg mixture
  6. Fold in grated carrots and walnuts
  7. Spread batter evenly in prepared pan
  8. Bake 12-15 minutes until golden
  9. Immediately loosen edges and invert onto clean towel
  10. Remove parchment paper
  11. Roll cake in towel while warm
  12. Cool completely on wire rack
  13. Beat cream cheese and butter until smooth
  14. Add powdered sugar and vanilla
  15. Unroll cake, spread with frosting
  16. Roll up carefully and slice
