Ingredients
• 4 eggs • 1 cup granulated sugar • ½ cup all-purpose flour • ½ tsp baking powder • ½ tsp cinnamon • ¼ tsp salt • 1 cup grated carrots • ½ cup chopped walnuts
FOR CREAM CHEESE FROSTING: • 8 oz cream cheese, softened • ¼ cup butter, softened • 1 cup powdered sugar • 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F
- Line 15×10 inch jelly roll pan with parchment paper
- Beat eggs and sugar until thick and pale
- Combine flour, baking powder, cinnamon, and salt
- Fold flour mixture into egg mixture
- Fold in grated carrots and walnuts
- Spread batter evenly in prepared pan
- Bake 12-15 minutes until golden
- Immediately loosen edges and invert onto clean towel
- Remove parchment paper
- Roll cake in towel while warm
- Cool completely on wire rack
- Beat cream cheese and butter until smooth
- Add powdered sugar and vanilla
- Unroll cake, spread with frosting
- Roll up carefully and slice
