Ingredients
1 cup grated carrots
1 cup grated zucchini
2 eggs
1/2 cup vegetable oil
1/4 cup honey or maple syrup
1/2 cup brown sugar
1 1/2 cups all-purpose flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
Optional: 1/2 cup chopped nuts or raisins
Instructions
Preheat oven to 350°F (175°C). Line or grease muffin tin.
Mix eggs, oil, honey, and sugar in a bowl.
Add grated carrot & zucchini, stir well.
Mix in flour, cinnamon, nutmeg, salt, and baking soda.
Fold in nuts/raisins if using.
Scoop into muffin cups and bake 20–25 mins.
Let cool before serving.
