Ingredients

🥕 1 cup grated carrots

🥒 1 cup grated zucchini

🥚 2 eggs

🛢️ 1/2 cup vegetable oil

🍯 1/4 cup honey or maple syrup

🍚 1/2 cup brown sugar

🌾 1 1/2 cups all-purpose flour

🥄 1 tsp cinnamon

🥄 1/2 tsp nutmeg

🧂 1/2 tsp salt

🥄 1 tsp baking soda

🧁 Optional: 1/2 cup chopped nuts or raisins


Instructions

🔥 Preheat oven to 350°F (175°C). Line or grease muffin tin.

🥣 Mix eggs, oil, honey, and sugar in a bowl.

🥕 Add grated carrot & zucchini, stir well.

🌾 Mix in flour, cinnamon, nutmeg, salt, and baking soda.

🥄 Fold in nuts/raisins if using.

🧁 Scoop into muffin cups and bake 20–25 mins.

⏱️ Let cool before serving.
