Tart and sweet, with a citrusy kick and a burst of cherry flavor!
Ingredients
1 cup unsalted butter, softened
1 cup sugar
1 large egg
1 tbsp lemon zest
2 tbsp fresh lemon juice
1 tsp vanilla extract
2 cups flour
½ tsp baking soda
¼ tsp salt
1 cup dried cherries, chopped (or fresh, pitted)
½ cup powdered sugar (for rolling)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Add egg, lemon zest, lemon juice, and vanilla extract, mixing well.
In another bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to the wet mixture and mix until combined.
Fold in chopped cherries.
Roll dough into tablespoon-sized balls and then roll in powdered sugar.
Place cookies on the baking sheet and bake for 10–12 minutes, or until edges are lightly golden.
Cool on a wire rack before serving.
