Chewy Oatmeal Cookies

Ingredients

  • Rolled oats – 2 cups 🌾
  • All-purpose flour – 1 1/4 cups 🥣
  • Brown sugar – 3/4 cup 🟤🍬
  • Granulated sugar – 1/4 cup 🍚
  • Unsalted butter (softened) – 1/2 cup (113g) 🧈
  • Large egg – 1 🥚
  • Vanilla extract – 1 tsp 🍦
  • Baking soda – 1/2 tsp 🧂
  • Salt – 1/2 tsp 🧂
  • Ground cinnamon – 1 tsp 🍂
  • Raisins or chocolate chips – 1 cup (optional) 🍇🍫

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  2. In a bowl, whisk together oats, flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, cream the softened butter with brown and granulated sugar until smooth.
  4. Beat in the egg and vanilla until combined.
  5. Stir the dry ingredients into the wet ingredients until just mixed.
  6. Fold in raisins or chocolate chips.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
  8. Bake 10–12 minutes until edges are golden but centers remain soft.
  9. Let cookies cool on the sheet 5 minutes, then transfer to a wire rack to cool completely.
