Ingredients
1 tbsp chia seeds
300g (2 cups) macadamia nuts
120g (1 1/3 cups) desiccated coconut
2 tbsp xylitol
2 tbsp cacao powder
1 tbsp orange zest
30g butter, melted, cooled
Pinch of sea salt
Instructions
1. Combine chia seeds and 2 tablespoons of water in a bowl. Let it sit for 10 minutes, stirring occasionally, until it forms a gel-like consistency.
2. In a food processor, blend macadamias, 1 cup of coconut, xylitol, cacao powder, orange zest, melted butter, chia mixture, and salt until finely chopped and well mixed.
3. Transfer the mixture to a bowl and roll tablespoon-sized portions into balls. Roll the balls in the remaining coconut to coat lightly.
4. Store in an airtight container in the fridge for up to 1 week.
