Ingredients
• 1 cup (230g) very ripe mashed bananas (about 2–3 medium)
• ½ cup (1 stick / 115g) unsalted butter, melted
• ¾ cup (150g) granulated sugar
• 2 large eggs
• 1 tsp vanilla extract
• ¾ cup (75g) unsweetened cocoa powder
• ½ cup (65g) all-purpose flour (or almond flour for lower-carb)
• ¼ tsp baking soda
• ¼ tsp salt
• Optional: ½ cup chocolate chips or chopped walnuts
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8″ pan with parchment paper.
- In a bowl, mash bananas until smooth. Whisk in melted butter, sugar, eggs, and vanilla until well combined.
- Sift in cocoa powder, flour, baking soda, and salt. Stir until just blended—do not overmix. Fold in chocolate chips or nuts if using.
- Pour batter into pan; spread evenly (it will be thick).
- Bake 25–30 minutes until a toothpick inserted comes out with moist crumbs (not wet batter).
- Cool completely in pan before slicing—this ensures fudgy texture!
