Ingredients
• 1 chocolate cake mix, prepared • 8 oz dark chocolate, chopped • 3 cups heavy cream, divided • ¼ cup granulated sugar • 3 tbsp cocoa powder • 2 tsp vanilla extract • 2 egg whites • Pinch of salt
FOR CHOCOLATE GANACHE: • 6 oz dark chocolate, chopped • ½ cup heavy cream
Instructions
- Bake chocolate cake according to package directions
- Cool completely and slice horizontally into two layers
- Melt 8 oz chocolate with 1 cup cream
- Whip remaining 2 cups cream to stiff peaks
- Beat egg whites with salt until soft peaks form
- Gradually add sugar and beat until stiff
- Fold chocolate mixture into whipped cream
- Fold in egg whites gently
- Place bottom cake layer on plate
- Spread mousse over cake
- Top with second cake layer
- Refrigerate 4 hours or overnight
- For ganache: heat cream and pour over chocolate
- Stir until smooth and glossy
- Pour over chilled cake
- Refrigerate until ganache sets
